Triple Chocolate Banana Cake

My family and friends love going camping, so I wanted a treat to use up bananas before they went bad. Had german Chocolate Cake mix and came up with this recipe with my daoughter’s help. Nothing is better then chocolate and bananas together. Since, we might be in the heat I use powder sugar instead of icing. ENJOY!
INGREDIENTS

  • 1 (18.25 ounce) package german chocolate cake mix
  • 1 (3.5 ounce) package instant chocolate pudding mix
  • 3 mashed banana
  • 4 eggs
  • 1 1/3 cup water
  • 1/2 cup vegetable oil
  • 12 oz semi-sweet chocolate chips

DIRECTIONS

  1. Preheat oven to 350 degrees. Spray 13 X 9 inch pan.
  2. In a medium bowl, stir together the cake mix and instant pudding. Add the eggs, oil, water and mashed banana, mix with an electric mixer until smooth. Fold in the chocolate chips. Pour evenly into the prepared pan.
  3. Bake for 50 to 55 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool in pan then add powdered sugar to make pretty.

Kiebasa and Rice

Well tonight I made a new dish I created thanks to hubby. He complained we have been eating to much pasta and he was tired of it. This of course is after I made sure to have mash potatoes and meatloaf this week. Got to love my husband.  I came up with this tasty dish that even the kids loved.

2 lbs Kiebasa

14.5 oz can of diced tomatos with basil,garlic and oregeno

8 oz pepper stir fry (frozen food: green, red, and yellow peppers and onions)

3 cups instant rice

3 cups water and juice from tomatos

2 beef boulion cubes

Bring water, juice, tomatos and boulions to boil then add rice.Remove from heat and simmer for 5 minutes. In the mean time, Cut and cook Kiebasa after it starts to brown add pepper stir fry and cook to remove all liquid. Then combine rice and kiebasa together. Enjoy!

Mexican Lasagna

I made this for dinner last night. I have seen many diffrent varaitions on this dish and I decided to make it my own. For medical reasons, I can’t make it to spicy not to mention the kids wouldn’t like it, but add the spice to suit your family. This also makes enough for 8 good size servings. So my family of four is eating it for left overs. Next time, I think I will make it in 8 by 8 dish and freeze the other 1/2.

Banana cake

On a spur of the moment, my family and I went to our friends house. Of course this is when we just pulled this cake out of the oven so we took it with us. My family and friends loved this cake. In fact for my friend to ask for the recipe it was a real compliment, since she is a suburb cook herself.  Since, my husband and son, only eat firm bananas I am always trying  new recipes to use up ripe bananas. I fell the cake is sweet enough just to add powder sugar, but it would also be great with a cream cheese icing.

Leftover Egg Casserole

A great recipe that you can use to be creative with your leftovers is my Leftover Egg Casserole.  It’s ideal for giving a new spin on those leftovers crowding up your refrigerator. I find it’s a great thing to prepare the night before and take to my friends when we have breakfast together.  Also to add a little fun during the weeknights I do a breakfast for dinner meal weekly. This really fills my children’s belly even on these cold winter days we are having.  Since this is a fix it and forget it type recipe, I can make it during the day or even let the children help me do it the night before, they get a lot of enjoyment out of ripping the bread apart.  So, when the children come home I can pop this in the oven and help the kids with homework or  just spend some quality time with them.
